The Hungry Geek- Mini Cebu-style Lechon Liempo


The weekend is coming up soon. That means extended hobby hours for a lot of our fellow geeks. Of course our fellow geeks will need sustenance to power them on. The Hungry Geek at Pinoy Geek Lab will help fellow geeks with simple yet yummy recipes to satisfy even the biggest munchie attack.

For this edition of the Hungry Geek, I will be sharing one of the best kept secrets of my kitchen- Mini Cebu-style Spicy Lechon Liempo.  I usually whip this recipe up when I'm busy, have no time to cook but want something satisfying.  This recipe takes only 10-15 minutes to prepare and you can leave it to marinade and cook while you go on with other things like playing a game or reading a comic or two.

 Mini Cebu-Style Spicy Lechon Liempo
 (Serves 2-3 People or one very hungry geek.)
Prep Time: 10-15 Minutes
Marinade Time: 1 hour
Cooking Time: 30-40 Minutes
Approximate Cost: Php 200 Pesos

Ingredients

1/2 Kilo Pork Liempo (Around 3-4 strips depending on the thickness of the slice.  Go for thinner 2/3 inch slices for easier preparation) 

2 Tablespoons of salt

1 Tablespoon of finely ground black pepper

8 pcs. of Siling Labuyo finely chopped

6 Cloves of Garlic crushed and chopped

Lemongrass (Tanglad)  Around 10 stalks.  (Php 10 worth of lemongrass is enough for this recipe. Lemongrass can be bought from most supermarket's fresh vegetable sections or even from vegetable vendors in the public market.)

Cooking Instructions

 1. In a bowl mix together the salt, pepper and the chopped siling labuyo.  Rub the resulting mixture on the strips of Pork Liempo.  Make sure that the Liempo is thawed out and no longer frozen before doing this.  Place the pieces of  liempo in an airtight container and place it in the fridge for an hour (not the freezer).

2. Take three stalks of lemon grass and fold the bunch into a 4 inch length.  Wrap each strip of liempo around the lemongrass stalk.  Refer to the image above on how to wrap the liempo.  Tie the liempo together using a stalk of lemongrass. Repeat for each strip of liempo.

3. Place the resulting liempo wraps inside a turbo broiler with space between each piece.  Set the temperature to 200C and let it cook for 15 minutes.

4. After 15 Minutes, turn then pieces over and let the liempo cook for another 15 minutes.

5.  After 15 minutes, if the liempo is not crispy enough for your taste, cook it for an additional 10 minutes.

This recipe is best enjoyed with spicy vinegar mixed with soy sauce and a bit of sugar.

Enjoy with lots of rice and your choice of cold beverage.
